Cheesy vegan veggie mac, loaded with veggies and Daiya vegan cheese, plus a little kick of spicy chipotle.

Recipe Ingredients for Cheesy Vegan Veggie Mac

8 serving Rotini Pasta
2 spear (about 5" long) Broccoli
5 mushroom Mushrooms
2 clove Garlic
1 cup Onions
20 cal Sweet Roasted Peppers
1/4 tsp Ground Black Pepper
1 tsp, ground Thyme, Dried
1/4 tsp Ground Chipotle Chile
240 cal Extra Virgin Olive Oil
1.5 cup Shreds

Recipe Directions for Cheesy Vegan Veggie Mac

  1. Boil water and cook pasta.

  2. Drain Pasta.

  3. Cook all veggies in a large frying pan with 1 TBS of olive oil.

  4. When veggies are soft add pasta to pan. Add another TBS of olive oil, and continue to cook.

  5. Add chopped garlic and spices.

  6. Stir everything together and add Daiya cheese shreds to the top and let melt.
