Recipe Ingredients for "Cheesy" Vegan & Gluten Free Stuffed Peppers

780 grams Peppers, Sweet, Red
81 grams Onions
7 grams Basil, Fresh
177 grams Diced Tomatoes
150 grams Beans, Black, Mature Seeds
7 grams Nutritional Yeast
1 cup Wild Rice, Cooked
1 tsp Tabasco Sauce
1 tsp Sea Salt
1/4 cup Newman's Own Marinara Sauce
1 serving Omega Natural Blend of Canola Soy and Olive Oils Oil

Recipe Directions for "Cheesy" Vegan & Gluten Free Stuffed Peppers

  1. This recipe uses about 4 red and yellow peppers.

  2. Cook some wild rice. This takes awhile, so you may want to do it ahead of time. I cooked about 1 cup dry, used one cup cooked and stored the rest for another meal.

  3. Preheat oven to 350 degrees

  4. Finely chop onions and pepper tops

  5. Blanche pepper bottoms in a pot of about 5 cups of water for five minutes.

  6. In a large fry pan or wok, sautee onions and chopped pepper tops in oil of your choice (I used Smart Balance) until onions are translucent.

  7. Add basil, sautee lightly.

  8. Add tomatoes, sautee lightly

  9. Add beans, cooked rice, nutritional yeast, tomatoes and marinara. Lightly stir and cover until all of the ingridients are warm.

  10. Stuff peppers with mixture and place in oven for about 25-30 minutes, or until done.
