This is filling and cheesy without having too many calories. Add your favorite herbs, some jalapeño or a little white or black pepper to spice it up.

Recipe Ingredients for Cheesy Summer Squash Quiche

600 grams zucchini
1/2 red onion
3 egg whites
5 eggs
1/2 tsp salt
100 grams Swiss Low Fat Semi-firm Cheeses

Recipe Directions for Cheesy Summer Squash Quiche

  1. Beat the eggs with the salt and whatever seasoning you're using.

  2. Thinly slice the zucchini and onion and chop the cheese into 1 cm cubes and stir into beaten eggs.

  3. Pour into a non-stick (I used silicone) pie pan and bake at 350º for about 35 minutes or until the egg solidifies.
