Recipe Ingredients for Cheesy Stuffed Potatoes

3 potato medium (2-1/4" to 3-1/4" dia.) Potato, Baked, Flesh And Skin
1 cup (not packed) Cottage Cheese, Lowfat, 1% Milkfat
1/2 cup Parmesan, Grated Cheese
1/2 cup, chopped Onions, Spring Or Scallions
1/2 tsp Garlic Powder
1/2 tsp Paprika

Recipe Directions for Cheesy Stuffed Potatoes

  1. Bake potatoes at 400F for one hour.

  2. Slice in half for main dish, slice off a "lid" about 1/2 inch down) and scoop out insides.

  3. Mix potato insides with cottage cheese, parmesan, and scallions.

  4. Put filling back into potato shells.

  5. Dust with paprika. Bake at 375 for 30 minutes.
