Recipe Ingredients for Cheesy Spinach and Tomato Quiche

4 cups Egg Beaters
4 medium tomatoes, sliced thin
4 cups spinach
1 large potato, sliced thinly
1 small onion, sliced thinly
1/4 cup skim milk
1/2 cup cheddar cheese, shredded
1 teaspoon Italian seasoning
1/2 teaspoon pepper

Recipe Directions for Cheesy Spinach and Tomato Quiche

  1. Preheat oven to 375

  2. Spray 9-inch pie plate with nonstick spray

  3. Layer potatoes and bake for 10 minutes until translucent, set aside when out of the oven

  4. Whisk eggs and milk until smooth, add seasonings and pepper until well-combined

  5. Layer spinach on pre-baked potatoes, then the cheese on the spinach

  6. Gently pour egg mixture over the veggies and redistribute the cheese as needed to make everything even.

  7. Layer onions, then tomatoes, then press down firmly and gently to make sure all veggies under the tomatoes have egg on them

  8. Bake for 35-40 minutes until middle is firm. Sprinkle with remaining cheese and broil until just bubbly

  9. Remove from oven and let sit for 5 minutes

  10. Enjoy!
