Recipe Ingredients for Cheesy Spinach Potatos

1 package fresh baby spinach
6 potatoes, peeled and chopped
2 cloves garlic
1/4 cup butter
1 cup low fat sour cream
1 tablespoon chopped green onion
1 teaspoon salt
1/4 teaspoon dried dill weed
1/2 cup shredded Cheddar cheese

Recipe Directions for Cheesy Spinach Potatos

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish.

  2. Saute spinach to wilt. Place potatoes and garlic in a pot with enough water to cover, and bring to a boil. Cook 15 minutes, or until tender but firm. Drain, cool slightly, and mash.

  3. In a bowl, mix the spinach, mashed potatoes, butter, sour cream, green onion, salt, and dill. Transfer to the prepared casserole dish. Top with Cheddar cheese.

  4. Bake 20 minutes in the preheated oven, until bubbly and lightly brown.
