Nice hearty summer time recipe especially if you are tired of tomato sauce

Recipe Ingredients for Cheesy Spinach Lasagna

1 pint skim milk
1 1/2 oz flour
1 1/2 oz unsalted butter
2 oz grated white cheddar cheese
1 1/2 cups parmesan cheese - grated, divided
2 1/4 cups part skim mozzerella cheese - grated
12 oz lasagna noodles - cook according to directions - 12 sheets
8 oz ricotta cheese
20 oz fresh spinach - chopped
2 tsps cayenne pepper
1 tsp black pepper
1 tablespoon olive oil
1 onion
3 tsps garlic

Recipe Directions for Cheesy Spinach Lasagna

  1. To make the sauce

  2. Melt butter over gentle heat in a midium sized sauce pan

  3. Add the flour and mix together to form a smooth paste and cook for 1 to 2 minutes

  4. Very slowly, add the milk, a little at a time, whilst continously whisking or stirring with a wooden spoon

  5. Continue to stir or whisk and cook over a medium-high heat until the sauce starts to thicken adn then reduce the heat and simmer for about 5 minutes. Do not allow the sauce to boil.

  6. Add white cheddar cheese and 1/4 a cup of parmesan cheese and stir until the cheeses melt

  7. Add the cayenne pepper and then season with black pepper, cook gently for about 1 minute

  8. For the spinach

  9. Use medium heat to heat olive oil in a large saute pan

  10. Add onions and garlic until tender

  11. Add spinach and lower heat to medium- low and cover

  12. Stir spinach occasionally as it reduces, 5-8 minutes

  13. Assemble lasagna

  14. Preheat oven at 350

  15. Spray lasagna pan with non-stick cooking spray

  16. Put a light layer of cheese sauce down

  17. Then place 4 lasagna noodles, slightly overlapping

  18. Next put a layer of spinach mixture, then put 12 spoonfuls of ricotta evenly, sprinkle some mozzarella and parmesan cheese. Then place down 4 overlapping lasagna noodles and repeat the layering process.

  19. Then end with noodles, sauce, mozzarella and parmesan cheese (leave ricotta out of top layer)

  20. Cover with foil and place in oven.

  21. Cook for 45 minutes, take foil off for the last 15 to brown the top.

  22. Let sit for 10 minutes and then cut and serve
