Spaetzel is a German egg noodle, which is open to a lot of interpretations! Here I used it to make something like macaroni and cheese. You can make this dish ahead of time and wait to put it in the oven until about 30 minutes before you are ready to serve. The squash gives it that vibrant orange-yellow color you see in boxed macaroni and cheese, while also adding fiber and lots of vitamin A!

Recipe Ingredients for Cheesy Spaetzel

250 grams egg noodles (spaetzel)
8 oz Velveeta cheese, 2% milk
12 oz frozen winter squash
1 tsp garlic salt
1 tbsp black pepper
1/4 cup grated Parmesan & Romano cheese
1 tsp paprika

Recipe Directions for Cheesy Spaetzel

  1. Take the squash out to thaw.

  2. Prepare spaetzel according to package directions in a large nonstick pot - bring water to a boil, cook for about 15 minutes, drain, and rinse.

  3. Return spaetzel to the pot on medium low heat.

  4. Cut up the Velveeta into chunks, and stir into spaetzel. Cover and give it a few minutes to melt.

  5. When the squash is thawed, stir into the noodles. Break up any chunks of squash and stir until evenly mixed.

  6. Stir in the garlic salt and pepper. I like to use coarse ground pepper.

  7. Once everything is melted and thoroughly combined, spread the noodle mixture into a glass baking dish.

  8. Sprinkle the top with the parmesan cheese, and top with the sprinkle of paprika for color.

  9. Bake just until the parmesan cheese is lightly browned.

  10. Cool for just a minute and serve.
