Recipe Ingredients for Cheesy Rice and Mushrooms w/Spinach

1 tbs olive oil
1 tbs Cumin
2 Onions
4 Celery Stalks
2 Garlic Cloves
1 tbs ginger root
1 tsp pepper
2 cups long-grain rice
1/4 cup sun dried tomatoes
28 oz canned tomatoes
3 cups vegetable broth
2 large mushrooms, stems removed, cut into 1/2 inch cubes
8 oz fresh spinach
2 cups Low fat cheddar cheese

Recipe Directions for Cheesy Rice and Mushrooms w/Spinach

In a skillet cook onion and celery until softened, about 5 minutes. Add Garlic, Ginger root, Cumin, pepper corns and rice; cook, stirring for one minute. Add sun-dried tomatoes, Tomatoes with juice and vegetable broth. Bring to a boil. Place mushrooms in slow cooker stoneware. Pour rice mixture over mushrooms and stir to combine. Cover and cook on low for 7 to 8 hours or high for 4 hours, until rice is tender and has absorbed the liquid. Stir in spinach and sprinkle cheese over the top. Cover and cook on High for 20 to 25 minutes, until spinach is cooked and the cheese is melted. Serve hot.
