Cheesy pancakes, made out of quinoa, with green onions (good with a lemon mayonaise)

Recipe Ingredients for Cheesy quinoa pancakes

0.67 cup Mozzarella Shredded
1/2 cup Quinoa
1/4 cup chopped(25 g) Scallions
1/5 cup Wheat Flour, White, All-purpose, Enriched, Bleached
1 large Egg, Whole
1 dash Pepper, Black
2 1tsp Olive Oil

Recipe Directions for Cheesy quinoa pancakes

  1. 1. Cook the quinoa.

  2. 2. Add shredded cheese, 3 tablespoons of flour, two green onions and 1 egg into a bowl.

  3. 3. Add the cooked quinoa and stir.

  4. 4. Let sit for 5 minutes; then create balls and put them one by one in a pan of oil on medium heat. Smush into pancakes.

  5. 5. Cook for 3-5 minutes on each side until golden brown.

  6. 6. Serve (with a side of lemon aioli).
