Yummy cheesy potatoes adapted from the Good Housekeeping Cook Book.

Recipe Ingredients for cheesy potatoes

4 potato large (3" to 4-1/4" dia) Potatoes, Russet, Flesh And Skin, Baked
8 oz American Singles
2 cup Milk, Nonfat, Fluid
1/2 cup Wheat Flour, White, All-purpose, Enriched, Bleached
1/2 cup Butter
2 medium (2-1/2" dia) Onions
3 slice (1 oz) Cheddar Cheese

Recipe Directions for cheesy potatoes

  1. melt butter and sweat chopped onions.

  2. Add flour and cook for a bit. Add milk and stir until mixture comes to a simmer and thickens.

  3. Add cubed american cheese and stir until cheese is melted.

  4. Thinly slice raw potatoes. Layer potato slices in the bottom of a casserole dish. Cover with about one third of the cheese sauce. Repeat layers two times. Top off with shredded cheddar cheese.

  5. Place casserole dish on a baking sheet. Bake coverd with foil for one hour at 365 degrees. Uncover and continue baking for one half hour or until the potatoes are tender and the cheese is browned on top.
