Recipe Ingredients for Cheesy Potato Gratin

2 tbsp butter
2 1/2 tbsp all-purpose flour
1 tsp thyme
2 1/2 c milk, skim
3/4 c Monterey Jack Cheese, shredded
1 tsp salt
1/4 tsp black pepper
3 lbs russet potatoes, peeled and cut into 1/8 in slices
1/3 c parmigiano-reggiano cheese, grated

Recipe Directions for Cheesy Potato Gratin

  1. Pre-heat oven to 375 degrees. Melt butter in a small saucepan over medium-high heat. Add flour, cook 2 minutes, stirring constantly with a whisk. Stir in Thyme. Gradually add milk, stirring with whisk; cook over medium heat until slightly thick(about 3 minutes), stirring constantly. Stir in Monterey Jack cheese;cook until cheese melts, about 3 minutes. Stir in salt and pepper;remove from heat.

  2. Arrange 1/4 of potatoes in bottom of a 13 X 9 baking dish coated with cooking spray, spoon about 3/4 cup sauce over potatoes. Repeat layers twice, and arrange remaining potato slices over sauce. Sprinkle with Parmiagiano-Reggiano cheese. Cover and bake for30 minutes. Remove cover and continue to bake for 40 more minutes, or until potatoes are tender. Remove from oven and let stand for 1o minutes.
