*Note* Calories are actually 230 per serving, because for some reason the calories are for regular cheddar cheese and not reduced fat (program cannot find calories for the reduced fat). Same goes for the chix broth since I use 5 cal per cup broth and not the 38 cal per cup they counted it as.

Recipe Ingredients for Cheesy Potato Corn Chowder

7 medium yukon gold potatoes, cubed
32 ounce fat free chicken broth
1 tbsp roasted garlic
1/2 tsp salt
1/2 tsp black pepper
1/3 cup all purpose flour
1 cup 1% milk
2 cups sharp cheddar cheese, part skim milk, shredded
22 oz whole kernel corn, drained

Recipe Directions for Cheesy Potato Corn Chowder

  1. Bring potatoes to a boil and reduce to simmer for 10-15 min or til tender. Drain and reserve 1 cup of potatoes.

  2. Mash the reserve and add back to pot with other potatoes, plus broth, garlic, salt and pepper. Bring to boil and reduce to medium for 2 min.

  3. Whisk together the milk and flour and add to soup, stirring constantly until thickened and boiling. Add cheese and corn. Serve.
