Recipe Ingredients for Cheesy Potato Broccoli Soup

1/5 pounds potatoes
1 clove garlic, minced
1/2 medium onion, chopped
1 tsp italian seasoning
1/2 tsp seasoned salt
1/2 tsp black pepper
1 cup lowfat milk
1 cup chicken stock, fat free, reduced sodium
1 tbsp smart balance light
1/4 cup cheddar cheese, shredded
1/4 cup monterey jack cheese, shredded
1 1/2 cups broccoli, chopped

Recipe Directions for Cheesy Potato Broccoli Soup

  1. Saute onion and garlic in the Smart Balance butter for 4-5 minutes, or until tender.

  2. Add salt, pepper, and italian seasoning; stir in milk and chicken stock.

  3. Quarter the potatoes, and add them to the liquid. Bring to a boil, then reduce to a simmer.

  4. Simmer for 8-10 minutes, or until potatoes are tender.

  5. Transfer half of the potato/liquid mixture into a blender or food processor, and puree.

  6. Pour the puree into a bowl.

  7. Place the leftover half of the potato/liquid mixture into the blender or food processor, and pulse until the potatoes are chopped into bite size pieces.

  8. Combine the puree and the chopped potatoes.

  9. Add steamed broccoli, top with cheese & serve!
