Recipe Ingredients for Cheesy Pesto Pinwheels

10 g bread, cracked thin (1 15" round)
6 oz fat-free cream cheese, softened (or 2/3 cup fat-free soft cream cheese)
3 tbsp pesto
1 large tomato
8 oz Provolone, Monterey Jack, or Swiss cheese (8 1oz slices)
5 g romaine lettuce (3 large leaves)

Recipe Directions for Cheesy Pesto Pinwheels

  1. Hold cracker bread briefly under cold water to dampen one side. Place on a flat surface with the dampened side down. Combine cream cheese and pesto and spread evenly over bread, leaving a 1/2" wide border

  2. Thinly slice tomato and shake out excess seeds and juice. Place tomato over cheese mixture. Arrange cheese slices in a single layer over tomato, leaving a 1" wide border. Roll up tightly and insert 4 wooden picks through roll to hold sandwich together while cutting. Cut crosswise into 4 pieces.
