Recipe Ingredients for Cheesy Mexican Eggplant

1 Eggplant cut in 1/2-in. thick rounds (1-1/2 pounds)
1 Non Stick Cooking Spray Original
1/4 teaspoon Fresh Ground Black Pepper
1 cup tomato Sauce
1 1/2 cups Mild Salsa
1/8 teaspoon Ground Cumin
114 grams Shredded Cheese
4 ounces Shredded mild cheddar Cheese

Recipe Directions for Cheesy Mexican Eggplant

  1. Preparation:

  2. 1. Place half of the eggplant on a broiler pan and spray with nonstick cooking spray.

  3. 2. Sprinkle half of the black pepper on top.

  4. 3. Broil for 5 to 8 minutes 4 inches from the heat, until light and brown.

  5. 4. Repeat the steps with the remaining eggplant.

  6. 5. Preheat the oven to 350 degrees.

  7. 6. Spread half of the marinara sauce in the bottom of a glass baking dish.

  8. 7. Layer half of the eggplant on top, followed by 1-1/4 cups marinara, taco sauce, ground cumin, 1 cup cheese, and 1/4 cup cilantro.

  9. 8. Repeat the steps.

  10. 9. Cover with foil and bake until bubbly, which takes about 40 minutes.

  11. 10. Prepare the rice as directed on the package.

  12. 11. Allow the dish to sit for 10 minutes and sprinkle with the remaining cilantro.

  13. 12. Serve with the prepared rice.
