Recipe Ingredients for cheesy mexican eggplant

2 1/2 lbs eggplant, cut in 1/2 in thick rounds
1/2 tsp freshly ground pepper
2 cups marinara sauce
8 oz taco sauce
1/2 tsp cumin
8 oz shredded cheese
1/3 cup chopped cilantro
1 1/2 cups brown rice

Recipe Directions for cheesy mexican eggplant

  1. place half the eggplant on broiler pan, coated with nonstick spray. sprinkle with pepper and broil 4 in. from heat 4-8 mins per side. repeat with remaining eggplant.

  2. heat oven to 350 degrees. stir together marinara and taco sauce with cumin

  3. spread 1/2 cup sauce in 3 qt baking dish. line with 1/2 the eggplant. put 1 1/4 cup of sauce then 1 cup of cheese, then 1/4 cup cilantro. repeat layering and cover with foil.

  4. bake 40 mins and top with cilantro. serve rice on the side
