Recipe Ingredients for Cheesy Lentil and Veggie Bake

1/2 tbsp sunflower oil
1 onion, chopped
1 lb carrots, chopped
2 clove garlic, minced
14 oz baked beans
1/2 cup lentils
2 cup water
2 servings herb ox bouillon granules
1 lb potatoes, raw, chopped into chunks
1 cup spinach, raw
3 tbsp skim milk
1 cup cheddar, shredded

Recipe Directions for Cheesy Lentil and Veggie Bake

  1. pan fry onion in oil for 5 minutes

  2. add carrots and garlic, fry for 2 more minutes

  3. add broth, beans and lentils, and any spices bring to a boil

  4. Cover and simmer until peas are tender

  5. meanwhile, steam potatoes for 15-20 minutes

  6. once potatoes are done, set them aside shortly and steam spinach for 5 minutes

  7. while spinach is steaming, mash potatoes with the milk and 1/2 of the cheese

  8. once spinach is done, mix cabbage in with the mashed potatoes

  9. once the lentils are tender and most of the liquid has been absorbed, transfer pea mixture to a square pyrex dish

  10. top with mashed potato mixture

  11. sprinkle remaining cheese on top

  12. heat under broiler for 4-5 minutes until cheese starts to brown

  13. cool for 5 minutes

  14. serve
