Mostaccioli tossed with creamy mascarpone and fontina cheeses. Peas dance shedding green light in the cheesy sauce. Don't be afraid of the smell of fontina cheese. It has a mild taste with a bit of tang. Creamy and wonderful!

Recipe Ingredients for Cheesy Italian Sausage & Mostaccioli

8 oz Mostaccioli, dry pasta, cooked and drained
5 mild italian sausages, links casings removed
16 oz green peas
8 oz mascarpone cheese
4 oz fontina cheese
1 T. olive oil

Recipe Directions for Cheesy Italian Sausage & Mostaccioli

  1. Cook and drain pasta. Reserve 1 c. of pasta water

  2. Remove casings from links.

  3. Heat olive oil in high-sided skillet. Add sausage, chopping up. Stir occasionally until cooked through.

  4. Add fennel, frozen peas and cheeses.

  5. Add pasta water as needed until desired consistency. Can also drain if necessary if peas give off too much liquid.

  6. When all cheese is melted, stir in pasta. Coat well & serve.
