Recipe Ingredients for Cheesy Italian Eggplant

1 pound eggplant
1 cup tomato sauce
3 tomatoes
2 tablespoons dried basil
2 tablespoons Italian seasoning
1 cup fat-free ricotta cheese
1/2 cup mozzarella cheese

Recipe Directions for Cheesy Italian Eggplant

  1. Preheat oven to 400 degrees F.

  2. Season eggplant with salt and pepper to taste and roast for 15 minutes, covering the bottom of a cooking spray coated glass baking dish with slices.

  3. Layer with half the sauce and half the tomatoes.

  4. Sprinkle with 1 tablespoon of each basil and Italian seasoning, then season with salt and pepper to taste.

  5. Top with half the ricotta and half the mozzarella.

  6. Repeat layers.

  7. Bake for 20 minutes, or until cheese is golden.
