My own creation, though I'm sure it's hardly original... I usually use a blend of reduced fat cheese, but that never comes up... Adjust the seasonings as needed!

Recipe Ingredients for Cheesy Garlic Mashed Potatoes

2/3 lb potatoes, skinned and cubed
1/4 cup soy milk, light
1/4 cup reduced-fat cheddar cheese, shredded
1 tablespoon butter, light
1 clove garlic, minced
1/4 tsp sea salt
1/4 tsp black pepper

Recipe Directions for Cheesy Garlic Mashed Potatoes

  1. Boil potato cubes in water for about 10 minutes or until they are very soft. Drain but leave potatoes in the pot.

  2. Add all remaining ingredients and mash to a heavy paste consistency, adjusting butter and milk to achieve the consistency without being to runny or lumpy. Serve hot!
