Recipe Ingredients for cheesy fritata

2 eggs
1/2 cup egg substitute
1 cup 1% cottage cheese
1/2 cup baby spinach
1/2 cup Cheddar cheese

Recipe Directions for cheesy fritata

  1. saute 10 inch pan with butter spray and spinach, you can add a lean lean meat to it if you like

  2. blend eggs, eggs substitute (you can either use a cup of egg substitute or 4 eggs instead) and cottage cheese together.

  3. pour contents in pan, allow to cook for 5 minutes

  4. place in oven and cook on 350 for 15 minutes
