Makes 12 servings



Based on Joy of Cooking. Substitute light soy milk for milk, and use Smart Balance Light Omega spread stead of all but 2 TBS butter. Recipe says serves 12. I got 9 biscuits out of it. But I weighed them and average was about 48g. So I adjusted serving size to get to 48g per serving

Recipe Ingredients for Cheesy drop biscuits

1 1/4 c whole wheat flour
1/2 c Unbleached flour
3 tbs baking powder
4 tbs Smart Balance Omega 3 light olive oil spread
2 tbs unsalted butter
3/4 c Vitasoy light soymilk
1 1/2 ounce cheddar cheese
1/2 tsp salt

Recipe Directions for Cheesy drop biscuits

  1. Mix flour, salt and baking powder

  2. With a pastry blender, cut in Smart Balance and butter until size of cornmeal

  3. Add in soymilk in a well in middle of flour mixture

  4. Stir in cheese

  5. Drop onto ungreased cookie sheet

  6. Bake 12-15 minutes at 400 F
