Blend of chicken, cheese, rice, salsa, topped with broiled cheese.

Recipe Ingredients for Cheesy, Crunchy, Mexican Chicken and Rice Casserole

16 oz Cooked Chicken Breast, diced
8 oz 4-Cheese Mexican Blend
3 cups White Minute Rice
4 cups Chicken Broth
1 packet Cream Chicken Soup Mix
1 cup Extra Mild Salsa

Recipe Directions for Cheesy, Crunchy, Mexican Chicken and Rice Casserole

  1. Mix half of cheese with all other ingredients.

  2. Bake at 350 for 45-50 minutes or rice is just tender.

  3. Top with remainder of cheese.

  4. Broil until desired texture or color. Usually dark brown.
