Recipe Ingredients for Cheesy Crab and Speghetti Squash Casserole

5 cups Spaghetti Squash
4 oz crab, jumbo lump, rinsed and drained
1/4 cup green onions, chopped
1 1/2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/2 cup 2% milk
1 cups low-fat sharp cheddar cheese, shredded
1 1/2 cup fontina cheese, shredded
1/2 teaspoon Worcestershire sauce
1 tsp dried minced garlic
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon of freshly grated nutmeg
1/4 cup Panko bread crumbs

Recipe Directions for Cheesy Crab and Speghetti Squash Casserole

  1. Preheat oven to 350 degrees F.

  2. Using a large knife cut squash in half to reduce cooking time. Cook squash on a baking sheet in the preheated oven for 30 minutes, or until tender. Shred with a fork once cooled slightly, then transfer to a lightly oiled casserole dish, discarding shell. Do not turn off the oven.

  3. Raise the oven temperature to 400 degrees F.

  4. Melt butter in a large saucepan over medium heat. Add the flour and cook, whisking constantly until golden, about 2 minutes. Continue whisking and add the milk in a slow, steady stream. Bring the mixture to a steady simmer, whisking constantly, and whisk until thickened, about 2 minutes.

  5. Remove the sauce from the heat, add the cheese, and stir until the cheese melts. Add crab and chopped onions. Stir in Worcestershire sauce, salt, pepper and nutmeg.

  6. Mix with shreded squash in 2 quart casserole dish, cover with bread cubes.

  7. Bake in the preheated oven for 15 minutes, or until warmed through and top is lightly browned and toasted. Serve immediately.
