Great way to kill a craving for cheesy comfort food healthfully. Add any veggies you like.

Recipe Ingredients for Cheesy Chicken Potato Bake

4 small red potatoes, thinly sliced
3/4 cup skim milk
1 tsp corn starch
2 cups chicken, precooked and shredded or chopped
2 cups broccoli, chopped
4 oz cheddar cheese

Recipe Directions for Cheesy Chicken Potato Bake

  1. In a saucepan, add milk, reserving 1 cold tbsp. Heat but do not boil. Meanwhile, mix corn starch with cold milk with a fork. Add to warm milk. Simmer slightly until thickened. Remove from heat and add freshly-shredded cheese. Mix until cheese is melted.

  2. Thinly slice potatoes and line baking dish with potatoes. Top with about 1/3 - 1/2 of sauce. Top with chicken and broccoli, then rest of sauce.

  3. Bake at 350 40-50 minutes or until potatoes are soft.
