These enchiladas are great to make ahead and freeze.

Recipe Ingredients for Cheesy Chicken Enchiladas

16 ounce reduced-fat cream cheese
2 cups reduced-fat sour cream
1 1/2 cups cheese, colby-jack
16 ounces chicken breast, boneless, skinless
21 1/2 ounce cream of chicken soup, 98% fat free
1/2 cup skim milk
4 ounce green chilies
10 flour tortillas

Recipe Directions for Cheesy Chicken Enchiladas

  1. Boil chicken for 30 minutes. Remove from water and shred once it is cool.

  2. In a large bowl, mix cream cheese, sour cream, and 1 cup of the shredded cheese. Add chicken to bowl and stir.

  3. Fill each tortilla with the chicken and cheese mixture. Roll up and place in two large baking pans (cake size).

  4. In a bowl, combine green chilies, cream of chicken soup, and a 1/2 cup of milk. Stir. Pour evenly over the top of both enchilada pans. Top enchiladas with remaining cheese.

  5. Bake at 350 for 45 minutes to 1 hour.
