My friends couldn't stay out of the kitchen when I made these for our Cinco de Mayo party. They smelled so good!

Recipe Ingredients for Cheesy Chicken Enchiladas

5 serving La Favorita Soft Corn Tortillas,
14.5 oz With Lime Juice and Cilantro Mexican Festival Diced Tomatoes
0.2 medium Orange Hothouse Bell Pepper
0.2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
0.2 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
6 slice, thin Onions
2 tsp Garlic Powder
2 tsp Pepper, Black
1.5 cup, chopped or diced Chicken, Meat Only, Roasted
7 serving Enchilada Sauce Mix
8 oz Kroger 4 Cheese Mexican Blend reduced fat cheese
3 serving kroger medium cheddar cheese
1 tbsp Olive Oil

Recipe Directions for Cheesy Chicken Enchiladas

  1. Preheat oven to 350 degrees.

  2. In medium nonstick pan, Heat oil to medium low and sautee onions and peppers til soft. Add can of Rotel tomatoes with cilantro and lime. Season with garlic powder and black pepper. Reduce heat to low. Add 1.5 cups of shredded, cooked chicken. Simmer.

  3. Warm corn tortillas and enchilada sauce separately. Paint a thin layer of sauce on tortilla. Fill with approx 2 Tbsp of chicken mixture

  4. and roll. Place in bottom of baking dish. Repeat. This recipe made 14 enchiladas. Shake a small amount of shredded cheese over the top. Cover with the enchilada sauce and remaining sliced and shredded cheeses.

  5. Bake until thoroughly heated and the cheese is melted. May finish in the broiler to reach desired color on top.
