Instead of combining the rice and broccoli, I pressed the rice into the bottom of the pan and combined the: broccoli, cream of chicken soup, eggs and milk in the blender. I spread the chicken and onions over the rice and poured the blender contents over that. Next, I topped with 8oz. of shredded cheese, followed by panko bread crumbs. Bake at 350 for 30 minutes, add more cheese on top if desired and cook for an additional 10 minutes. Broil for 3-4 minutes to get a brown crispy top and you're set! The only thing I would do differently next time would be to add some cheese IN the mixture since the bottom half of the casserole IS a bit bland without it.

Recipe Ingredients for Cheesy Chicken Casserole

3 cups rice
10 ounce broccoli
1 tablespoon butter
2 cups chicken
1/2 cup onion
4 eggs
1 cup milk
2 cups Cheddar cheese
10 3/4 ounces cream of chicken soup

Recipe Directions for Cheesy Chicken Casserole

  1. Combine rice and broccoli; spoon into a greased 12-in. x 8-in. x 2-in. baking dish.

  2. In a large skillet, saute mushrooms in butter until tender.

  3. Remove from the heat.

  4. Add chicken and green onions; spoon over rice mixture.

  5. Beat eggs, milk, salt and pepper; pour over all.

  6. Sprinkle with 1 cup cheese.

  7. Spread soup over top.

  8. Bake, uncovered, at 350 degrees F for 30 minutes.

  9. Sprinkle with remaining cheese and bake 15 minutes longer.
