Recipe Ingredients for Cheesy Cauliflower Soup

5 cups cauliflower florets
2 1/2 cups lowfat milk
2 tablespoons olive oil
2 leeks
2 cups water
1 teaspoon bay leaf
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons flour
1 1/2 cups sharp cheddar cheese
1 tablespoon lemon juice

Recipe Directions for Cheesy Cauliflower Soup

  1. heat oil in large saucepan.

  2. Add sliced leeks and cook until soft - about 5 minutes

  3. add cauliflower, 2 cups milk, water, bay leaf, salt and pepper.

  4. Bring to a boil, stirring often.

  5. Reduce heat and cover. Cook until cauliflower is soft - about 8 minutes. Stir occasionally

  6. whisk flour with remaining milk and add to saucepan when cauliflower is soft

  7. remove bay leaf

  8. cook until the soup has thickened

  9. remove from heat and add lemon juice and cheese

  10. serve
