Wonderful warm soup for a cold winter's evening. Can be lightened up by using fat free or 2% fat ingredients.

Recipe Ingredients for Cheesy Broccoli soup

1 tbsp Butter
1 small Onions
1 carrot (7-1/2") Carrots
1 stalk, medium (7-1/2" - 8" long) Celery
2 clove Garlic
0.062 cup Gold Medal All Purpose Flour
1 cup Milk, Reduced Fat, Fluid, 2% Milkfat
14 oz Vegetable Broth
2 medium raw Potato
4 cup flowerets Broccoli, Flower Clusters
1 tbsp Parmesan, Grated Cheese
1.5 cup, shredded Cheddar Cheese
2 slice American Singles

Recipe Directions for Cheesy Broccoli soup

Chop all veggies. Heat butter in a soup pot. Saute onion, cellery, carrot and garlic until they begin to soften. Add the flour and stir for a minute. Add enough water to the broth to make 2 1/2 cups. Slowly add the broth/water stiring. Add milkand potatoes. Let boil on low for 10-15 minutes. Add the broccoli and parmesan cheese. Cook for 5 minutes. Add the other cheeses and use an emersion blender to puree 1/2 of the soup. Enjoy
