A wonderfully filling and healthy dish that can be served as a main course or in a smaller serving as a side. Feel free to add more veggies like corn or omit some. Add in chicken if your heart desires. Mix up the spices! This is a very versatile recipe.

Recipe Ingredients for Cheesy Black Bean and Rice Casserole

2/3 cup brown rice
1 cup vegetable broth (chicken broth also will work)
1 tablespoon olive oil
1/3 cup diced onion
2 medium zucchini, thinly sliced
3/4 cup grated carrot
1/2 cup sliced mushrooms (optional)
1/2 teaspoon cumin
1 salt to taste
1 ground cayenne pepper to taste
15 oz black beans, rinsed and drained
4 oz diced green chili peppers, drained
1 1/2 cups shredded Cheddar cheese

Recipe Directions for Cheesy Black Bean and Rice Casserole

  1. Mix the rice and vegetable broth in and both and bring to a boil. Reduce heat to low, cover, and simmer 45 minutes, or until rice is tender.

  2. preheat oven to 350 degrees. Lightly grease a 9x13 casserole dish.

  3. heat the olive oil in a skillet over medium heat and cook the onion until tender. MIx in the zucchini, mushrooms, and carrot. Season with cumin, salt, and ground cayenne pepper. Cook and stir until zucchini is lightly browned and crisp-tender.

  4. In a large bowl, mix the rice, onion, zucchini, carrot, mushroom, beans, chili, and half the cheese. Spread into casserole dish and top with the remaining cheese.

  5. Cover the casserole loosely with foil, and bake 30 minutes in the preheated oven. Uncover and continue baking 10 minutes, or until bubbly and lightly browned.
