A delicious and nutritious meatless casserole.

Recipe Ingredients for Cheesy Beans and Rice

1 cup uncooked brown rice
16 oz kidney beans, drained and rinsed
1 large onion, chopped
1 tbsp canola oil
16 oz diced tomatoes and green chilies, undrained
2 tsp chili powder
1/4 tsp salt
1 1/4 cup cheddar cheese, shredded

Recipe Directions for Cheesy Beans and Rice

  1. Cook rice according to package directions. When cooked, add drained kidney beans.

  2. In a skillet on medium heat, sauté onions for 4-5 minutes until transparent. Add tomatoes, chili powder, and salt and bring to a boil. Take off heat.

  3. In a casserole dish sprayed with cooking oil, layer a third of the rice mixture, cheese, and then tomato mixture. Repeat layers, ending with tomatoes. Save 1/3 of the cheese.

  4. Cover and cook at 350°F. for 30 minutes. Remove cover, add remaining cheese, and cook 5-10 minutes longer until cheese melts.
