Recipe Ingredients for Cheesy Beans and Rice

1 cup brown rice
16 oz kidney beans, rinsed and drained
14 1/2 oz tomatoes, undrained
1/4 tsp. salt
2 tsp. chili powder
1 1/4 cup shredded cheddar cheese

Recipe Directions for Cheesy Beans and Rice

Cook rice according to package directions. Tranfer to a bowl and add beans. In a separate bowl, mix tomatoes, salt, and chili powder. In a 2 quart baking dish coated with non-stick cooking spray, layer a third of the rice mixture, tomato mixture, and cheese. Repeat layers. Cover with foil and bake 350 degrees F for 30 minutes. Uncover and sprinkle with remaining cheese. Bake 5-10 minutes longer or until cheese is melted.
