Perfect dish when you want mac and cheese but can't have it!

Recipe Ingredients for Cheesey Veggie Bake

1 tbs margarine
1 tbs flour
1 cup skim milk
1/4 cup cheddar cheese
1/4 cup monterey cheese
1 cup chicken stock
1/2 cup broccoli
1/2 cup brown rice
1/2 cup cauliflower
3/10 cup carrots
3/10 cup celery
0.34 cup onion

Recipe Directions for Cheesey Veggie Bake

  1. Melt margarine in a heavy skillet, then add flour, stirring into a blonde roux.

  2. Slowly add milk until you have a creamy texture.

  3. Melt cheese in, adding a bit at a time until smooth

  4. In a small caserole dish with a lid, add remaining ingredients. Pour cheese sauce over top, stir.

  5. Bake at 375 for 25 min, removing lid for last 5 minutes.
