Recipe Ingredients for Cheesey Potatoes and Spinach

3 large (3" to 4-1/4" dia.) Potatoes, Boiled
0.5 package (10 oz) yields Spinach
2 tbsp Salted Butter
1 serving Yogurt - Greek Plain (Liberte)
2 serving Goat's Soft Unripened Milk Cheese
0.5 tsp Garlic Powder
1 tbsp chopped Chives
3 serving Dairy - Old Cheddar Block (PC Blue Menu)

Recipe Directions for Cheesey Potatoes and Spinach

  1. Preheat oven to 400 degrees.

  2. Peel and boil potatoes in salted water until soft.

  3. Combine thawed and drained spinach, melted butter, yogurt, goat cheese, garlic powder and chives.

  4. Add cooked potato and mash.

  5. Bake in casserole dish for 15 minutes.

  6. Sprinkly grated cheese on top.

  7. Bake for 5 more minutes until cheese is melted.
