Cheesey fish pie with mashed potato topping

Recipe Ingredients for Cheesey Fish Pie

2 oz sea scallops, grilled
3 oz shrimp, peeled, grilled
2 1/4 oz tilapia, grilled
15 oz trout, grilled
180 grams alfredo sauce (use a jar of Ragu sauce)
4 oz portabella mushrooms, canned
1 1/2 oz cheddar cheese, 1% milk fat, grated (3oz of 75% reduced fat cheese is equivalent in calories)
2 cloves garlic, crushed
2 oz bell pepper, red, diced
3 oz onion, yellow, diced
1/2 cups white wine, dry
1 tbsp flour
5 tbsp margarine, divided
3 cups instant mashed potato flakes
3 cups water
1 cup milk
2 tsp salt
1 tsp pepper, white
1 tsp onion powder

Recipe Directions for Cheesey Fish Pie

  1. Cut seafood into chunks.

  2. Heat 1TBSP margarine then add peppers, onion, hot peppers if you like spicy and garlic.

  3. Stir until softened adding a pinch of salt.

  4. Turn heat to low and add 1TBSP flour.

  5. Stir well and allow to cook through for a minute.

  6. Add 1/4 cup white wine and stir.

  7. Remove from heat when thickening begins.

  8. Add alfredo sauce and use the other 1/4 cup of wine to shake and empty jar.

  9. Add grated cheese and stir to melt.

  10. Pour over seafood chunks in casserole dish.

  11. Make instant mashed potatoes per package instructions and top the casserole.

  12. Bake at 350F until bubbly and potatoes begin to take on color.

  13. Remove from oven and let stand 5 minutes to set.

  14. Serve!
