"Casserole" for slow cooker, with chicken, rice, and a goodish amount of vegetables. Pretty spicey! Very tasty with FF sour cream and/or refried beans. This can make a good burrito filling as well, or just a dish on its own. Makes 7 one-cup servings

Recipe Ingredients for Cheesey Enchilada Casserole

1 1/4 c dry brown rice
5 c Campbell's Cheddar Cheese soup (2 cans)
5 oz Old El Paso enchilada sauce (1/2 can)
3/4 oz McCormick Mild taco seasoning (1/2 package)
3/4 c Mexicorn
1 c chopped green bell pepper
3/4 c onion, diced
1/2 c celery, diced
2 small carrots, diced
1 chicken breast, diced
20 g brown mushrooms (2 large-ish), diced
1/4 c sliced black olives

Recipe Directions for Cheesey Enchilada Casserole

  1. Chop all vegetables

  2. Combine all ingredients (rice and chicken uncooked) into slow-cooker

  3. Set on low and cook 5-7 hours, or until rice is well cooked
