Recipe Ingredients for Cheeseless Artichoke Omelet

5 artichoke hearts, chopped
1/2 tablespoon olive oil
1/4 tablespoon salt
5 eggs
6 egg whites
1 tablespoon butter, unsalted
1 1/2 tablespoons thyme, fresh, finely chopped

Recipe Directions for Cheeseless Artichoke Omelet

  1. In large skillet, heat oil over high heat. Add artichokes and sprinkle with salt. Saute artichokes, stirring occasionally for ten minutes.

  2. Mix eggs and egg whites in bowl and combine artichokes and thyme.

  3. In large skillet, heat 1 tablespoon olive oil. Pour in egg mixture. Cook for 5 minutes.

  4. Carefully lift edges and flip frittata. Cook for one more minute. Slice into four wedges.
