Low carb version of a pancake/cheesecake from Nigella Lawson

Recipe Ingredients for Cheesecakelets

3 eggs
3 tbs sugar
1/3 c flour
1 cup cottage cheese
2 tbs canola oil
1 tsp vanilla extract

Recipe Directions for Cheesecakelets

Seperate egg yolks from whites. Combine yolks with the sugar, cottage cheese, vanilla extract and canola oil. Mix in flour until combined. Wisk egg whites until frothy and fold into cottage cheese mixture. Drop a small amount onto greased griddle and flip when bubbly on top. Use fresh berries to top.
