Recipe Ingredients for Cheesecake

1/4 cup graham cracker crumbs
24 oz Cream Cheese Spread Fat Free
18 packets splenda granulated
1 tsp. lemon zest
1 tbsp. lemon juice
1/2 tsp. vanilla
3 eggs
1 tbsp (15 mL) lemon juice
1/2 cup (125 mL) frozen strawberries
1/2 cup (125 mL) frozen blueberries
3 packets splenda granulated
1 tbsp cornstarch

Recipe Directions for Cheesecake

  1. COMBINE raspberries, strawberries and lemon juice with (3 packets) 2 tbsp (30 mL) of splenda in a small pot. Heat at 110F (45C) until splenda dissolves (1 minute) and set aside.

  2. HEAT oven to 300F.

  3. SPRINKLE graham crumbs onto bottom of 9-inch pie plate sprayed with cooking spray. Beat next 5 ingredients with mixer until well blended (18 packets of splenda = 3/4 cup). Add eggs, 1 at a time, mixing on low speed after each just until blended.

  4. POUR into pie plate.

  5. BAKE 45 min. or until center is almost set. Cool completely. Refrigerate 3 hours. Top with fruit just before serving; drizzle with jelly.
