cheesecake made with greek style yogurt instead of sour cream

Recipe Ingredients for Cheesecake

16 oz reduced fat cream cheese
16 oz greek yogurt
1 cup sugar
4 eggs
1 tablespoon vanilla
1/8 teaspoon salt
2 cups graham cracker crumbs
6 tbsp sugar
4 tbsp butter, melted

Recipe Directions for Cheesecake

  1. Prebake a graham cracker base into a 9-inch springform pan (see recipe below); a 9-inch graham cracker pie crust should work fairly well, too. This cheesecake can also be baked without a crust.

  2. Preheat oven to 350F.

  3. In a food processor, blend cream cheese, yogurt, sugar, eggs, vanilla extract and salt until mixture is very, very smooth.

  4. Pour into prepared pan and bake for about 50 minutes, until the cake is set and jiggles only slightly when gently tapped.

  5. Cool to room temperature before refrigerating.

  6. *can also be made into cupcake tins - makes 24
