High Fibre, High Protein, Low Fat,

Recipe Ingredients for Cheesecake!!!!

3 cups Fiber One, crushed
2 tbsp margarine spread, fat free
16 oz fat-free cream cheese (Phili Light)
3/4 cup Splenda sugar substitute
3/4 cup fat-free yogurt (Astro Original All Natural)
1 tsp vanilla extract
1/4 cup egg whites
1 egg
1 cup blueberries (or raspberries, cherries, etc.)
2 tbsp Splenda
1 tbsp lemon juice
1 tbsp water

Recipe Directions for Cheesecake!!!!

  1. Preheat oven to 350 degrees F.

  2. Finely crush Grind Fiber One in small food processor and mix with softened margarine and hazelnut butter. Press firmly onto bottom of a 9 inch springform pan. Set aside.

  3. Beat cream cheese and Splenda sugar substitute in large glass bowl with electric mixer until well blended. Add yogurt and vanilla, mix well. Add egg whites and egg and beat on low speed just until blended. Pour into prepared crust.

  4. Bake 50-60 minutes orn until centre is almost set. Run small knife around rim of pan to loosen cake but cool before releasing the rim of the pan. Refrigerate.

  5. To prepare topping, simmer the topping ingredients in a small sauce pan until bubbly. If you use Blueberries the skin will start to split when the sauce is finished. Pour warm sauce over each slice of cheesecake at time of serving.

  6. Enjoy.
