Recipe Ingredients for Cheesecake with Pretzel Crust

1/2 lb pretzels, crushed
2/5 cup margarine, room temperature
2 tblsp brown sugar
1 tsp salt
1/2 cup evaporated milk
4 eggs, room temperature
16 oz reduced fat cream cheese, room temperature
3/4 cup sugar
1 tblsp lemon juice
2 tblsp vanilla

Recipe Directions for Cheesecake with Pretzel Crust

  1. preheat oven to 350

  2. put pretzels in a food processor until crushed, (small pieces are okay but no big ones)

  3. add brown sugar, salt, and room temperature margarine and pulse to combine

  4. press into a pie plate and bake 10 min

  5. combine remaining ingredients and whisk or blend with a blender

  6. poor cheesecake mixture into pretzel crust and bake 40 min

  7. run knife around edge of pie pan and let cool on metal rack

  8. chill in fridge once cool for about 3 hours before serving
