Recipe Ingredients for Cheesecake Bites

8 oz cream cheese
3/8 cup sugar
1 egg
1/2 tsp vanilla extract
1 tbsp orange juice
5 servings graham crackers , 10 whole crackers
5 tbsp margarine , melted

Recipe Directions for Cheesecake Bites

  1. Preheat oven to 350.

  2. For the graham cracker crust, crush crackers into crumbs and mix with melted butter. Press mixture evenly into a pie plate or round cake pan of similar size, making sure the crumbs go up the sides.

  3. Allow cream cheese to come to room temperature. With electric mixer, beat cream cheese until light and fluffy.

  4. Add egg, vanilla and orange juice. Continue to beat until mixture is smooth.

  5. Scrape down the sides of the bowl with a spoon or rubber spatula to catch lumps.

  6. While beating, add sugar one 1/8 cup at a time to incorporate sugar evenly. After all the sugar is incorporated, continue to meat on medium speed for another minute or so to make sure all the lumps are gone -- the batter will be very thick and smooth.

  7. Pour batter into prepared crust and tap pan on the counter to even batter and remove air bubbles. Place pan into a cake pan or sided cookie sheet filled with a cup or two of water, then place both pans carefully into the oven.

  8. Bake for 25 - 40 minutes until cheesecake is no longer liquidy -- but still a bit "jiggly". Do not bake until cracked, or it will be overdone. Carefully remove cheesecake pan from the oven *taking care not to splash hot water*.

  9. Cool cheesecake for 2 hours at room temperature then chill in the fridge.

  10. Cut into small squares using a knife or spatula, cleaning with water between cuts. Store in the refrigerator.
