1 portion ( yield from 1/2 lb raw meat ) Beef, Ground, 95% Lean Meat / 5% Fat, Crumbles
0.75 cup, chopped or diced Onions
0.75 cup, chopped Carrots
0.75 cup, diced Celery
1 tsp, ground Basil, Dried
1 tsp Spices Parsley Flakes
4 tbsp Margarine Soft
3 cup Soup, Chicken Broth
4 cup Potatoes, Boiled
0.25 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
8 oz Cheddar Cheese
1.5 cup Milk, Lowfat, Fluid, 1% Milkfat
4 tbsp Sour Cream
0.75 tsp Salt, Table
0.5 tsp Pepper, Black

Recipe Directions for Cheeseburger Soup (Taste of Home)

  1. Brown beef, then set aside.

  2. In the same pan, saute onion, carrots, celery, basil and parsley in 1 tb of butter until tender (about 10 mins).

  3. Add broth, potatoes and beef; bring to a boil.

  4. Reduce heat and simmer until potatoes are tender.

  5. Meanwhile, in a small skillet melt remaining butter. Add flour, cook and stir for 3-5 minutes or until bubbly. Add to soup; bring to boil.

  6. Stir for 2 minutes.

  7. Reduce heat to low. Add cheese, milk, salt and pepper.

  8. Stir until cheese is melted. Remove from heat.

  9. Add sour cream.
