Recipe Ingredients for Cheeseburger Pie

3/4 lb extra lean ground beef (1 pound raw weight)
1 onion, diced
1/4 cup ketchup
1 dash salt (optional)
1/4 tsp. pepper
1 cup flour
1 1/2 tsp. baking powder
1 tsp. sugar
1/4 tsp. salt
1/3 cup skim milk
1/6 cup oil
1 cup tomatoes, diced (I used a drained 14 oz. can no-sodium-added tomatoes)
60 g light cheddar, grated (I prefer medium or old)

Recipe Directions for Cheeseburger Pie

  1. Preheat oven to 350 F.

  2. Scramble-fry ground beef and onion for about 10 minutes, until beef is no longer pink. Drain off any fat. Add ketchup, salt and pepper and mix.

  3. To make crust, combine flour, baking powder, sugar and salt. Make a well in the centre and add milk and oil. Stir until just combined. Make into a ball and press out into a pie plate. (I found it only covered the bottom as I halved the amount of crust in the recipe.)

  4. Layer beef over crust.

  5. Layer tomatoes over beef.

  6. Layer cheese over tomatoes.

  7. Bake for 45 minutes until the crust is cooked through (any exposed crust would be golden) and cheese is melted.
