Recipe Ingredients for Cheeseboard Wolverines

1 3/4 cup warm water
3/8 cup rye flour
2 1/3 cup bread flour
4 1/2 cups bread flour
2/3 cup whole wheat flour
1 1/2 tbsp wheat bran
2 cup water
3 1/2 tsp salt
1/4 cup dried apricots
1/4 cup chopped pecans
1/2 cup dried cherries
1/2 cup golden raisins

Recipe Directions for Cheeseboard Wolverines

  1. First three ingredients are the sourdough starter. make this before, letting ferment for 2 weeks

  2. Kneed fruit and nuts into kneeded bread dough (the next ingredients plus the starter)

  3. Let rise 5 hours in draft free place

  4. Divide into 12 pieces and let rest 15 minutes under floured kitchen towel

  5. Let rise 3 more hours until increased by 1/3

  6. Pour 1 cup ice water in a roasting pan at the bottom of a 450 oven to create a steamy environment

  7. Bake 5 minutes and add more water.

  8. Bake 15 minutes more and rotate pan

  9. bake 20 minutes more for total time of 35-40 minutes
