Cheese rolls a la Cheeseboard bakery in Berkeley

Recipe Ingredients for Cheeseboard Cheese Rolls

1 3/4 cup warm water
3/8 cup rye flour
2 1/3 cup bread flour
4 1/2 cups bread flour
2/3 cup whole wheat flour
1 1/2 tbsp wheat bran
2 cup water
3 1/2 tsp salt
8 ounces gruyere cheese
8 ounces asiago cheese

Recipe Directions for Cheeseboard Cheese Rolls

  1. First three ingredients are the sourdough starter. make this before, letting ferment for 2 weeks

  2. Combine other ingredients sans cheese with the starter and let rise 5 hours

  3. Transfer dough to floured surface and let rest 10 minutes before flattening into rectangular shape

  4. Make 10x18 inch rectangle

  5. Evenly distribute cheese over entire surface of dough and roll jellyroll style

  6. Cut into 1 1/2 inch slices

  7. Place on baking sheet under floured towel and let rise 3 hours until increased by 1/2

  8. Pour 1 cup ice water in a roasting pan at the bottom of a 450 oven to create a steamy environment

  9. Bake 5 minutes and add more water.

  10. Bake 15 minutes more and rotate pan

  11. bake 20 minutes more for total time of 35-40 minutes
