Recipe Ingredients for Cheese and Vegetable Chowder

1 medium (2-1/2" dia) Onions
2 cup (1" pieces) Cauliflower
2 cup, chopped Broccoli
2 cup, chopped Carrots
2.25 container Chicken Broth
2 cup Milk, Lowfat, Fluid, 1% Milkfat
0.25 cup Wheat Flour, White, All-purpose, Enriched, Bleached
4 serving Mozza-Cheddar Cheese

Recipe Directions for Cheese and Vegetable Chowder

  1. Melt butter in large saucepan. Cook and stir onion over medium-high heat until tender. Add cauliflower, broccoli, carrot and condensed chicken broth. Bring to boil.

  2. Reduce heat, cover and simmer 10 minutes or until vegetables are tender.

  3. Whisk milk into flour until smoothly combined; add to saucepan. Cook and stir over medium heat until mixture boils and thickens.

  4. Remove pan from heat; add the cheese and stir until cheese is melted. Season with salt and pepper.
